Chocolate Shortbread Cookies

Liz, my daughter, Says: "Hi everyone!
Last night I made Chocolate Shortbread Cookies out of the Joy of Cooking cookbook. It's on page 776 of the newer edition, in case anyone wants to check it out! Here's the recipe..."

Liz Says: I enjoyed these roommate and my best friend LOVED them!

2 sticks (1 cup or 16 tablespoons) unsalted butter
1/2 cup superfine or regular sugar
1/4 teaspoon salt

stir until blended:
3 ounces semisweet chocolate/bitter sweet chocolate melted and cooled slightly

gently stir in 2 cups unbleached all-purpose flour (measured by: spoon into measuring cup and level to rim)

press dough evenly in 9- x 13- inch pan

bake around 40 minutes on 300 degrees F, or when top is lightly firm/toothpick inserted comes out clean.
