
Bourbon Sauce

Used with the Raisin Bread Pudding Recipe.
FROSTING, ICING, ETC RECIPE HELP
INGREDIENTS
1 cup sugar
8 Tablespoons butter, melted
1/2 cup buttermilk
1 Tablespoon bourbon (not sour mash like Jack Daniels)
1/2 teaspoon baking soda
1 Tablespoon Lyle's Golden syrup
1 Teaspoon vanilla
Combine all ingredients in a heavy saucepan, bring to boil (stirring constantly) and maintain boil for 1 minute.
Watch it carefully as this sauce will foam up and "break" (it's OK, see following comment)
Allow to cool, then whisk until all foam is recombined, you will have a thick golden brown sauce that tastes almost like butterscotch.
Serve warm.
* I start off with a wooden spoon and switch to a whisk when it starts foaming.
The whisk helps contain the sauce in the pot and is just safer (splashes will stick and burn).
