This wonderfully easy and refreshing Beet, Radish, and Red Onion Salad makes a great side dish to serve with any informal meal. You can use the vegetables raw or roast them before tossing into a salad.
This is a great way to use misshapen or ugly produce from the farmers' market, or any left-overs from the fridge.

VEGETABLE INGREDIENT HELP
INGREDIENTS
4 medium beets, thinly sliced
2 radishes, thinly sliced, optional
1 red onion, thinly sliced
2 - 3 tablespoons apple cider vinegar
1/4 teaspoon salt
INSTRUCTIONS
1. Combine all of the ingredients in a medium size bowl.
2. Chill for about an hour before serving.
SERVE
Portion onto individual plates.
STORAGE
Store in the refrigerator for a day or two.
