Coffee cakes (coffeecakes) are typically single layer cakes that may be square, round, loaf-shaped or rectangular. They usually contain nuts, fruit and flavorings, such as cinnamon. They are often topped with a crumbly or crumb topping called streusel and/or a light glaze drizzle.
Coffee cakes are best served immediately after baking. They may be mixed by the Muffin Method or other mixing methods, such as the Creaming Method, and are leavened with chemical leaveners such as baking powder and/or baking soda, called quick-breads. Some may be leavened with yeast, but then are known as sweet yeast breads.
