If you have any left-over berries of fruit or that which has seen better days, this is a great recipe to make. We want to help prevent food waste and show you ways to use what we call ugly produce.
8 slices fruit bread or Brioche bread; more bread recipes
1 cup goat cheese, softened at room temperature
1 cup blueberries
1 cup raspberries
1 cup strawberries
1/4 cup maple syrup to drizzle
1. Toast fruit bread slices and while still warm, spread goat cheese evenly on each slice.
2. Top with a selection of fresh berries, such as blueberries, raspberries, and strawberries evenly on each slice.
3. Drizzle each slice with maple syrup.
Cut each slice into thirds to serve.
Refrigerate left-overs for a day.
